The Best Ways to Eat Cheese: Part 2
This will continue part two of our “The Best Ways to Eat Cheese” miniseries. Who doesn’t like cheese? Who doesn’t like a good miniseries? If you didn’t raise your hand for either of these critical questions, you’re again, in the right place. In the first part of this miniseries, we discussed some of the tantalizing ways that we can infuse cheese in a number of dishes, and even desserts. From cheese-stuffed meatballs to cheese-infused pie crust to a ham and cheese bread bowl, there was something from just about everyone’s taste buds. And, the best part, there were all relatively easy to make and didn’t really break the bank, which is always a great thing!
In part two of this miniseries, we will divulge a number of other foods that we can secretly infuse with cheese that will create a pronounced flavor to an already delicious culinary masterpiece.
Stuffed Peppers… with Cheese!
We’ve all had or even made stuffed peppers at some point in our lives, and if you haven’t, what on Earth are you waiting for? For as delicious as stuffed peppers can be if made with that added touch of TLC, a remarkable version of this dish can created by infusing the meat with your favorite cheese!
Apples and Oats… don’t forget about the Cheese!
When making apples and oats, alone, it is a pretty awesome and dynamic flavor of tart and sweet. Adding cheese to this will create a far more dynamic concoction that will leave your taste buds begging for more. This treat becomes a masterpiece when using Brie as your cheese of choice, infused within the apple and oats, and you actually get that cheese pulling effect every time when using Brie!
Cheese Soup
One of the simplest recipes on Earth is making soup. This recipe can be complex depending on what kind of soup you’re making. Easily heighten the flavor of the soup by either adding cheese to it or making the broth of the soup cheese-based. Here is a great recipe for Beer and Cheese soup
Ingredients
- 2 cups (450g) wheat beer or pale ale
- 3 tbs (30g) cornstarch
- 16 ounces (450g) sharp white cheddar, grated
- 1 cup (240g) broth (vegetable or chicken)
- ½ cup (120g) heavy cream
- 1 tsp (4g) red pepper sauce
- salt and pepper to taste
- ¼ cup chopped chives
- 2 cup (200g) tater tots, cooked according to package directions*
Instructions
- Add the beer, cornstarch, cheddar, broth, heavy cream, and red pepper sauce to a blender. Blend on high until very well combined, about 5 minutes.
- Add to a pot over medium high heat, simmer until warmed and slightly thickened.
- Season with salt and pepper to taste, stir in chives.
- Ladle into serving bowls, top with tater tots, serve immediately.

Cheese with Salad… That Simple!
Take you favorite salad, and add cheese to it. It can be any kind of salad… vegetable salad, green salad, fruit salad, antipasto salad. Just add some of your favorite cheese as a topping or add the cheese another “main ingredient” to the salad. Here is a unique recipe for making Watermelon, Radish, Orange and Goat Cheese Salad
- 1 shallot or half of a small red onion
- 2 to 3 tablespoons white balsamic vinegar
- kosher salt
- 2 to 3 watermelon radishes
- 2 to 3 oranges, clementines, grapefruit, etc.
- a handful of walnuts, toasted and chopped (see notes)
- goat cheese to taste
- chives, minced, optional, but they add some nice color
- olive oil to taste
- Mince shallot. Place in small bowl. Cover with 2 to 3 tablespoons of the vinegar depending on how big of a salad you are making. Add a pinch of salt. Set aside.
- Cut off one end of the radish. Leave the other intact so you have a handle when you run the radish down your mandoline. Peel the radishes if you wish, though it is by no means necessary. Thinly slice on a mandoline. (Note: I ate one slice unpeeled and thought it tasted fine but went ahead and peeled them anyway because I thought the salad might look prettier if they were peeled, but I don’t think it actually really matters.) Arrange radish slices on a platter. I try to fold some of them so they’re not all squished down in one flat layer, but arrange however you wish. Season all over with salt.
- Cut off each end of each orange. Squeeze each end over the radishes, then discard. Use a sharp knife to remove the skin from the orange. Cut in between membranes to remove each slice. Squeeze remaining membrane all over the radishes to extract any juice. Scatter oranges over the radishes.
- Scatter walnuts and goat cheese to taste over the radishes and oranges. Pour macerated shallots and vinegar over top. Drizzle olive oil to taste (one to two tablespoons) over top. Scatter chives over top if using.
- Let sit a few minutes (or longer — it benefits from a brief rest) before serving.

Simply Fry It!
Cheese, in and of itself, is a delicious staple of food. It can come in various sizes, shapes, colors, textures, tastes, ages, among many other variations. Cheese takes on an entirely new level of taste when you decide to fry it. While it may not be the healthiest sound option, it sure is delicious. Sometimes its good to be a little bad, ha! Here is a recipe for Fried Goat Cheese with Honey. That sounds delicious just thinking about it!
- 4 oz goat cheese, cut into eights
- 1 egg
- ½ cup rice flour
- ½ cup club soda
- 1½ cup panko
- Honey, for drizzling
Instructions
- Heat oil in a cast iron pan to 1″ depth over medium heat to a temperature of 375.
- Take each piece of goat cheese and roll in a ball.
- In a shallow bowl, whisk together the rice flour, egg and club soda. Place the panko in another bowl.
- Roll each ball in the egg mixture, then coat with the panko. Repeat the process and then place the coated ball on a piece of wax paper. Repeat with the remaining seven balls. Place in freezer for 10 minutes until firm.
- Drop each ball in the oil, turning until they are golden brown, about 3-4 minutes. Remove to a paper towel to drain, then place on serving plate and drizzle with honey
- Serve immediately.

What’s Better Than A Cavs’ Championship? Smoked Gouda Mashed Potatoes
Gouda, or “How-da” as the locals say, is a Dutch cheese named after the city of Gouda in the Netherlands. If truth be told, it is one of the most popular cheeses in the world, accounting for 50 to 60 percent of the world’s cheese consumption. It is a semi-hard cheese celebrated for its rich, unique flavour and smooth texture. The original cheese markets in Gouda is one of the last standing commercial cheese markets in the Netherlands. Since the name is not protected, it has become a generic classification for all cheeses produced and sold under the name Gouda.
Gouda is typically made from pasteurised cow’s milk although some artisan varieties use sheep’s or goat’s milk to produce cheeses that are going to be aged for a long time. Boerenkaas is a typical variety of unpasteurised Gouda cheese produced by the farmers from milk of cow’s grazing on the natural, low pastures of Netherlands. There are seven different types of Gouda cheese, categorized depending on age. Graskaas is young Gouda ready to be consumed within weeks of production. On the other hand, is the extra aged, Overjarig cheese which has a full-flavoured, hard, golden interior and salty flavour reminiscent of a toffee. Between the spectrums is a variety of Dutch Gouda’s classified as per the texture and age – Jong, Jong belegen, Belegen, Extra belegen, and Oud. Each cheese gets increasingly firmer in texture and richer in flavour than earlier classification. The waxed rind of the cheese also changes by the age as soft, younger Dutch Gouda cheese are identified by yellow, orange, or red wax rinds white mature cheese have black wax coverings.
In America, smoother and less flavorful commercial Gouda is popular than Dutch Gouda. Artisans in Netherlands may produce Dutch Gouda using raw milk as well as pasteurized. To enhance the flavor of the cheese, herbs, seasonings, and nuts may be blended. In Netherlands, aged Gouda is commonly used to richen soups, sauces.
Young Goudas are best paired with beer while medium cheeses taste best when paired with a fruity Riesling or Chenin Blanc. A well aged Gouda complements wines that are deeply flavored such as a rich Merlot or Shiraz. Gouda cheese may be grated, sliced, cubed or melted. It may be used as a table cheese or dessert cheese.
SMOKED GOUDA MASHED POTATOES

Fancying up mashed potatoes can take a plain Jane dish and make it a stand out yummy. Sorry if your name is Jane. What better to make something stand out than smoked gouda? Oh baby. It’s yummy. Add 1 cup for a hint of smokey goodness, and 2 cups for a heavier handed approach. Or maybe your tastes will fall somewhere in between. This is a fabulous twist on your standard taters. Live a little, right?
Time to Make It: about 30 minutes
Yield: Serves 6 to 8
Ingredients
6 large russet potatoes
6 cups chicken broth
1/2 cup butter
4 oz cream cheese
1 tsp salt
1/2 tsp white pepper
1 to 2 cups shredded smoked Gouda Cheese
Instructions
1. Bring the chicken broth to a boil in a large stockpot. (If you need more liquid to cover your potatoes, you can add in water.)
2. Meanwhile, peel and rinse the potatoes. Cut them into bite-size pieces. Pace them in the chicken broth. Return to a boil, reduce heat to medium low, and simmer until potatoes are soft, about 10 to 15 minutes depending on the size of pieces.
3. Drain the liquid from the potatoes. Add in butter, cream cheese, salt, and pepper. Use a hand mixer to whip until smooth, or mash together with a potato masher until cheese and butter are melted.
4. Mix in the Smoked Gouda until cheese is melted. Serve hot.

Who doesn’t love cheese or chocolate? But together? Believe it or not, they’re actually the perfect combination for a tasting!

The Art of Tasting
Learning how to taste cheese and chocolate will deepen your appreciation for the foods and makers. Start with your basic senses and expand from there. Be sure both are room temperature before tasting. Remove the cheeses from refrigerator at least 20-35 minutes before the tasters arrive to maximize flavors and aromas. Cold cheese does not release flavors and aromas as quickly and alters the taste.
First, look…
Cheese: Some cheeses are intense in color while others are not. Look at the cheese rind. Is it uniform? Any cracks? Is the cheese dry like a walnut shell or moist like a sliced apple?
Chocolate: For chocolate, color depends on the origin of the beans. Quality chocolate will be shiny, glossy, and have clean edges. Look for bloom or grayish white steaks caused by poor temperature and improper storage.
Second, smell to appreciate…
Cheese: Cheese offers a full spectrum of aromas such as fresh butter, boiled milk, yogurt, fermented hay, nuts, caramel, chocolate, spices, mold and animal (yes, animal!)
Chocolate: There is an incredible array of scents and aromas in chocolate. Milk chocolate aromas may include milk, caramel and malt. Dark chocolate may include nuts, coffee, dried fruits and wine.

Third, taste…
Cheese: Is the cheese dense, compact or light? Is it smooth, grainy or crunchy? The higher the butter fat content, the creamier the mouth feel of the cheese will be.
Chocolate: Never chew chocolate. Chocolate should melt in your mouth. Good chocolate will feel silky and smooth. Subpar chocolate may feel grainy, waxy or greasy to the tongue.

Last, the finish..

Allow the cheese and chocolate to linger to fully appreciate the finale of the flavors. The finish is important as many of the early flavors may be masked by other ingredients.

Delectable Recipes Using Smoked Gouda

- 1 thinly sliced onion
- 2 tbsp butter
- ¼ tsp white vinegar

- 2 tbsp melted butter
- 2 ounces of chopped prosciutto
- 4 flour tortillas measuring 10 inches in diameter
Preparation method –
Take a heavy medium skillet and melt two tablespoons of butter in it over medium heat. Add onion, vinegar and brown sugar and sauté for a while. When the onion turns golden brown, remove and cool to room temperature.
Set the oven to 350ºF and preheat it. Divide the tortillas equally and sprinkle cheese on one half. On top of the cheese, sprinkle sautéed onions and prosciutto and season with pepper. Over this cheese mixture, fold the other half of the tortilla. Brush the tortillas and a large skillet with melted butter and place over medium heat. Tortillas must be cooked carefully until you find the brown dots appearing on them. When they are done, transfer to a baking sheet and bake till the cheese melts and the tortillas are golden. When they are done, transfer the quesadillas to a working surface and cut them into six triangles before arranging and serving from a platter.

Solving The American Obesity Epidemic
We in the United States have set numerous precedents in our relatively short history, many of which the rest of the civilized world saw fit to follow. But there is one that we as Americans are not particularly proud of. We now hold the title of the world’s most obese nation. One in every three Americans is obese. We are not proud of that, and would not consider it a precedent the rest of the world should follow, but statistics show the rest of the world IS following.
Obesity is not just an undesirable way to look in most cultures. There are many health risks involved with being overweight including cardiovascular disease, hypertension, stroke, and of course diabetes. It is one more reason for health insurance premiums to increase.
So why do we keep packing on the pounds? Most of the experts say it is a combination of our crazy-busy, yet mostly sedentary lifestyle. Stay at home Moms that prepare meals for their families are becoming more and more rare. We all have to not just work these days, but work long hours and commit to a myriad of extra-curricular activities. We have become dependent on fast or over-processed foods that can be prepared quickly with little effort because we do not have time to prepare a well-balanced meal. Then we spend every spare minute trying to clear our minds with sedentary activities. Instead of taking a walk after dinner like our grandparents did, we plant ourselves in front of the TV, computer, or video games.
The obesity rate in the U.S. has doubled in the last ten years, and there is no evidence that we will correct our course any time soon. It is difficult to change the daily habits we develop. There is no shortage of diets, miracle pills, and even surgeries that promise rapid weight loss. But these are temporary (and sometimes risky) solutions to problems that were created by the habits of a lifetime. There is one common thread amongst obese people. They are procrastinators. They believe that some day soon there will be some miracle cure that will provide them with the perfect body overnight, with little or no effort on their part. Maybe they are just planning to start their diet next week. Maybe they tried diet and exercise for a period of time and were disappointed with the results. Maybe they are waiting until they get the big promotion at work and can afford the gastric bypass or one of the other bariatric surgeries that are becoming increasingly popular. The excuses are many, and marketers are capitalizing on that hope for a “miracle cure” for obesity.
Weight loss is now a billion dollar empire, but why is it that as the number of miracle weight loss products continues to grow, so do our waistlines? Professionally monitored diet plans like Jenny Craig and Nutrisystem promise great results if you can afford them, but how long do you plan to siphon a portion of your hard earned money into an advisor and their over-priced specialized foods? Do you think you can just stay on the program until you reach your goal weight and then maintain it on your own? Will you keep the weight off, or just return to your old habits as soon as there is no longer an advisor to hold you accountable? You would think Kirstie Alley would have been able to afford to stay on the Jenny Craig program indefinitely. What happened to her?
Pills, cookies, and smoothies also promise great results with little effort. But again, you must ask yourself how long you want to be dependent on those crutches to maintain a healthy weight, and what are the side effects?
You may even be willing to go under the knife in the name of weight loss. But elective surgeries are expensive and can be risky. Now that statistics are available on the long-term effects of the original gastric bypass performed in the 1970s, we know that the procedure was not just risky, but downright dangerous! What will the statistics show about the current bariatric procedures twenty years from now?
That leaves us with the ever-popular and ever-changing miracle diets. Low-carb diets like The Atkins Diet became so popular a few years ago that they almost put Krispy-Kreme donuts out of business in the middle of an economic boom! But while The Atkins Diet delivered rapid results, over time we found out the results were undone even more rapidly. The food selections were fairly limited, and were too far removed from our current eating habits, making us unable to enjoy meals with friends or at restaurants. Anything resembling a dessert was permanently off-limits. One slip could undo the effort and sacrifice of an entire week. So the market became flooded with imitators that promised a better selection of foods that were more conducive to our current lifestyles. But the very word “diet” implies a temporary sacrifice in our modern vocabulary. How can you achieve permanent results with a temporary sacrifice? Unless every condition in our lives is ideal, even the temporary sacrifice becomes too difficult to make. As soon as we become sick or stressed or have to deal with any adversity, we seek comfort in the old familiar foods we used to enjoy. So how will we maintain a healthy weight if we can not even maintain a temporary sacrifice long enough to get to our goal weight?
Making a temporary sacrifice will not permanently solve a problem. As soon as you fall back into your old habits, the weight will creep back up. We need to permanently change our habits.

Manchego Cheese

History of Manchego Cheese
Manchego cheese is a sheep’s milk cheese made in the La Mancha region of Spain. Manchego cheese is aged for three months or longer, and is semi-firm with a rich golden color and small holes. It ranges from mild to sharp. Manchego cheese has a long historic and literary tradition, as it was mentioned by Cervantes in the legendary “Don Quixote of La Mancha”.

The aromatic intensity of a Manzanilla wine makes it an excellent foil for Manchego cheese. The result is a magnificent combination of aromas giving a new sensation of complexity and elegance.
