Asiago Cheese – Everything You Need to Know

We are very proud of our cheese selection. We know that for some of you we might be stocking cheeses that you haven’t tried before, so we like to give you tips and tricks for how to use them. Today we are focusing on Asiago Cheese.
At Shisler’s we carry the aged version of Asiago (ah-SYAH-goh) Cheese, an Italian cheese more specifically known as Asiago d´Allevo. It is aged anywhere from three months to up to a year. The texture also varies from semi-firm to firm depending on how long it is aged and it contains small to medium holes throughout its body. It has a sweet and nutty flavor, reminiscent of Parmesan.
It is popular as a table cheese and is good when enjoyed with crackers, fruits, and red wine. Asiago is treated as interchangeable with parmesan and romano cheeses in some cuisines.
History of Asiago Cheese
Asiago cheese is an Italian cheese named after a region in Italy where it was first produced. This region is known as the Asiago High Plateau, which lies within the Italian Alps. As far back as the year 1000 AD, Asiago cheese was produced by farmers in this region for use locally. Now, it is manufactured commercially in northeast Italy, specifically in the provinces of Vincenza e Trento, Padua, and in Treviso.
How to Use Asiago Cheese
The aged cheese is often grated into salads, soups, pastas, and sauces while the fresh Asiago cheese is sliced to prepare panini or sandwiches. It can also be melted on a variety of dishes.
It is a brilliant cheese to bake into bread for a cheesy treat or grate over soft pretzels before baking. We also think it works particularly well with chicken dishes. Try pasta with asiago, chicken and a cream sauce or stuff a chicken breast with slices of Asiago and wrap it in pancetta or prosciutto before cooking. You could also try it instead of Parmesan when making a Caesar salad.
For a vegetarian dish, try roasted cauliflower with a cheese sauce made from asiago. Add toasted flaked almonds for a crunchy topping or even some raisins if you like sweet and savory dishes.
Wine Pairing with Asiago Cheese
Asiago Cheese, like many Italian cheeses, is fairly universal when it comes to wine pairing. It is more commonly paired with reds such as Beaujolais, Cabernet Sauvignon, Merlot, Pinot Noir, Syrah, and of course Chianti. For those who prefer white wines, Asiago cheese also pairs well with Chardonnay, Riesling, or Sauvignon Blanc. If you like to try cheeses with beer, we recommend an IPA or a Saison style beer, as the fruitiness will work well with the cheese.

Peanut Butter: The Perfect Addition to your Baking

We love finding new baking ideas and we also love peanut butter, so today we are combining the two to share with you some fun ideas for baking with peanut butter.
- Peanut Butter Cookies
Best served with a glass of milk, these are a true classic. Add peanut butter to your cookie batter or spread it on top. You can go for straight peanut butter or add chocolate – choose your favorite. Cookies also make great ice cream sandwiches!
- Peanut Butter Cheesecake
Mix the peanut butter into the cheese, use peanut butter cookies in the base, or even create a peanut butter topping. You could even chop some Heggy’s Milk Chocolate Peanut Butter Creams and stir them in. However you decide to bring peanut butter into your cheesecake, you know that it will be delicious.
- Peanut Butter Brownies
Take your favorite brownie batter and swirl in some peanut butter. You could even add a crunchy topping with some crushed up Peanut Butter Pretzels. Try a blondie with white chocolate if you have a really sweet tooth.
- Peanut Butter S’mores
Just when you thought s’mores couldn’t get any better, we added peanut butter! You can do this in a couple of different ways. Either make a normal s’more and add a smear of peanut butter to one of your graham crackers or replace your chocolate with a peanut butter cup. You could even add some caramel if you want a real treat.
5. Peanut Butter Pancakes
Pancakes aren’t just for breakfast. They make a great dessert too! This filling will work for both. Put peanut butter, chocolate chips and slices of banana in your crepes before rolling them up.
6. Peanut Butter Sundae
Create a sauce by heating 3 parts caramel, 1 part peanut butter and 1 part milk until it is smooth. Pour it into the bottom of your sundae glass. Layer it with ice cream, banana, caramel, and any other ingredients that you like. Top with a sprinkling of chopped peanuts.
7. Peanut Butter Popcorn
Combine peanut butter with syrup to drizzle over popcorn. This is a messy treat so make sure that you have cloths on hand to clean up!
8. Protein bars
If you want to create a healthier treat that will give you plenty of energy, make a peanut butter based protein bar. These can be made with peanut butter, honey, protein powder, and oatmeal, but there are lots of different recipes out there.

5 Ways to Take Your Grilled Cheese to the Next Level

It’s one of the nation’s favorites: the grilled cheese.
If you’re anything like us, you’ve tried a lot of grilled cheeses. You’ve probably already decided whether you like to butter your bread on both sides (we’re firmly in the yes camp!). You might have found your favorite cheese or chosen the ultimate bread. Well today, we’re going to show you how to take your grilled cheese to the next level with some clever additions and changes.
1. Add fruit
We absolutely love a sweet and savory combo! Adding fruit to your grilled cheese is an incredible way to add sweetness. You might want to choose a cheese based on the fruit that you’re going to use. Blueberries with mascarpone, peaches with gouda, apple butter with pepper jack, and strawberries with mozzarella are all great combinations. You could even create a Hawaiian pizza inspired grilled cheese with ham and pineapple.
2. Go for different bread
You might have found your favorite loaf, but that doesn’t mean you need to always reach for it. Have you tried brioche bread for your grilled cheese? It gets an incredible caramelization from its high sugar content. You could also try bagels! Even croissants work really well. It is produced in small batches on a family farm in Holmes County, Ohio. The sap is hand gathered and boiled in a small backyard evaporator. It’s then filtered and combined with locally gathered wild black walnuts and a small amount of cane juice crystals to create this unique twist to an old favorite.
