Gouda is a yellow cow’s milk cheese with a red or yellow wax coating. Gouda is made by culturing and heating the milk until the curd. separates from the whey. Some of the whey is then drained, and water is added. This is called “washing the curd”, and creates a sweeter cheese, as the washing removes some of the lactic acid. As it ages it develops a caramel sweetness and sometimes has a slight crunchiness from salt-like calcium lactate or tyrosine crystals Our Gouda is imported from the Netherlands, where it originated. But the name is not protected and there are numerous imitators, so make sure any Gouda you buy is authentic.
History of Smoked Gouda
Gouda was named for the province in south Holland where it was originally developed. There are now numerous variations of the original, as well as multiple imitators. We also carry regular Gouda.
