Cheddar Cheese: Everything You Need to Know
We continue our exploration of different cheeses with a look at cheddar cheese.
What is Cheddar cheese?
A hard, aged cheese that is off-white or sometimes yellow in color. It originates in Somerset in the UK. There, it is aged in the caves of the Cheddar Gorge as they have a good level of humidity and the right temperature.
The curds and whey are separated. After heating, the curds are kneaded with salt and then cut into cubes before being stacked. Extra-mature cheddar must be aged for at least 15 months.
Our Canadian Fine Aged Cheddar is aged for a longer period of time giving it a much stronger, sharper flavor.
We also sell White and Orange Cheddar. Orange Cheddar is traditional white cheddar with Annatto, an extract from the tropical achiote tree, and oleoresin paprika added. These added ingredients give the orange cheddar its orange color and a milder flavor.
If you like spicy cheeses, try the Hot Habanero Cheddar, Smoked Habanero Cheddar, or Horseradish Cheddar. To try other flavors, we recommend the Garlic or Smoked Cheddar.
How does it taste?
It has a sharp taste that develops as it ages. It is also creamy and sometimes milky in flavor. When aged 2 to 3 months, the cheddar remains mild and is better for offering texture or a little seasoning to a dish. It becomes sharp when it has been aged for around 6 months and is extra-sharp from around 1 year of aging.
How should I eat it?
As cheddar is a classic cheese, it can be used almost anywhere. Grate it over pasta, pizza or roasted vegetables. It is particularly good in autumnal and winter dishes for adding extra flavor alongside stews and casseroles.
It melts well so it is a great option for grilled cheese. Add it to any sandwich with a good helping of chutney or pickles. The sharp flavors marry together well for an excellent lunch or snack. It also works well with other savory flavors such as harissa, caramelized onions, or meats such as ham and salami.
The texture makes it excellent for mixing into different ingredients such as pastry or bread doughs. This imparts the flavor of the cheese and gives some melted, crispy elements to the finished dish.
For the simplest of dishes, create a plate with cheese, hams, fruits such as apples and grapes, crackers, and crusty bread. This can make a fantastic lunch or a quick and easy dinner. Add a glass of wine on the side for a real treat.
What should I drink it with?
The sharp and pungent flavor of Cheddar pairs well with light, fruity red wines such as Zinfandel, Syrah, and Merlot. White wine lovers can enjoy Riesling, Pinot Gris, or Sauvignon Blanc with their cheese as they have enough flavor to stand up to the tanginess of the cheese. You could also enjoy a slice of cheddar with a Port, Madeira, or Brandy.

What is Swiss Cheese?

How does it taste?

How is Swiss Cheese made?
The process of making Swiss cheese involves natural bacteria consuming the lactic acid in the cheese. This releases carbon dioxide gas, which forms bubbles that become the holes in the cheese. These are often referred to as “eyes”. Our Amish swiss cheese, made in Northeastern Ohio, is especially flavorful because of the longer aging process that it undergoes, at a higher temperature than younger cheeses. This produces larger eyes, which is sometimes seen as an indicator for better flavor.
The milk used in our Swiss cheese does not have preservatives added and is always from cows that have not been given hormones or antibiotics.
We also offer Baby Swiss, which substitutes water for the milk’s whey to slow the bacterial action. This creates smaller holes and a milder flavor. Lacy Swiss is another variety of Swiss cheese, made with low-fat milk. We even offer smoked Swiss cheese.
How should I eat it?
Swiss cheese is delicious in a sandwich or served cut into cubes alongside salads and hams. It works well with most meats and is particularly good with a beef burger.
Use it as fondue or mix it into dips for a fun dinner party meal or appetizer.

Pepper Jack Cheese: Everything You Need to Know
What is Pepper Jack Cheese?
Pepper Jack Cheese is a cow’s milk cheese that blends the creamy, buttery flavor of Monterey Jack cheese with the intensity of spicy peppers. Jalapeños, serrano peppers, and habañero peppers are all used to create heat. As the cheese ages, the peppery flavor intensifies. Some older pepper jacks can taste quite zesty, but generally, the cheese is only aged for a few months. It will take on a creamy color and semi-firm textures.
How is Pepper Jack Cheese made?
Monterey Jack Cheese was made by the Mexican Franciscan friars of Monterey, California, in the 19th century. Then David Jack, a California businessman, decided that the market for the cheese could be developed. He produced the mild, white cheese that we now call Monterey Jack. Later, producers began to add small pieces of spicy peppers to the curds of their Jack cheese, creating Pepper Jack Cheese.
How should I eat Pepper Jack Cheese?
Pepper Jack Cheese melts very well. This makes it great for quesadillas, hot sandwiches, and nachos. Try adding it to Mexican food as these flavors pair well together.
The moist texture also makes it suitable for grating over dishes. It goes especially well with barbecued meats such as beef, and it can be used on burgers, steaks, and various broiled dishes. You could also serve cubes or slices as part of a cheese platter. Try it with melons, grapes, pickled vegetables, and olives for contrast and great texture. 3 Uses for Mozzarella – Let’s Try Homemade Cheese Today!
As regular readers will know, we’re huge fans of sharing fantastic cheese recipes with you.
If you’re needing some fresh to pep up your January, there’s nothing better than our homemade mozzarella. It’s ready in just 30 minutes and you can make it at home. Even better, once you’ve made some delicious mozzarella, you get to eat it!
Mozzarella is a semi-soft cheese. Due to its high moisture content, it is traditionally served the day after it is made, but can be kept in brine for up to a week in the fridge.
Derived from the Neapolitan dialect spoken in Campania, mozzarella is the diminutive form of mozza (“cut”) or mozzare (“to cut off”) derived from the method of working. The term is first mentioned in 1570, cited in a cookbook by Bartolomeo Scappi, reading “milk cream, fresh butter, ricotta cheese, fresh Mozzarella, and milk”.
You probably already have some favorite mozzarella recipes, but we hope our ideas will inspire you to make some cheese today.
1. On a pizza
We know this isn’t a new idea, but if you’ve never made pizza at home then now is definitely the time to give it a go. Pizza dough is really easy to make and if you get yourself a pizza stone you will be able to enjoy the crispy base you love without even leaving the house.
You only need a little mozzarella, to stop the dough from becoming soggy, and then you add your favorite toppings. You could even put some mozzarella on the edges of the pizza and roll over the dough to make your own stuffed crust. Invite your friends over for a pizza party and they’re sure to marvel at your homemade cheese.
2. In a fruity salad
Whilst you might always think of having mozzarella in a Caprese salad with tomatoes, its creaminess is the perfect accompaniment to a salad with fruits.
Combine mozzarella with figs and green beans, oranges and arugula, or peaches and basil for a great pick-me-up salad. All of these will go perfectly with ham or bacon. Get creative and try your own combinations, too.
3. In a burger
No, we don’t mean in a bun with your burger, we actually mean in a burger. This is another recipe to try at home if you’ve never had a go before. Patties can be made simply out of ground beef, bread crumbs, an egg and salt and pepper. But next time you make them, roll a small piece of mozzarella into the middle. When they cook, the cheese will melt inside and will ooze deliciousness with every bite.
Make sure to fill your bun with your favorite salad and relishes for real perfection.
If you’re looking for a wine pairing for mozzarella, a fruity Sauvignon Blanc will work perfectly with the mild freshness of the cheese. If you prefer red wine, the cherry flavors of Sangiovese or Chianti would work well.

Season with salt, pepper, and nutmeg. Serve this with cubes of your favorite bread, chopped vegetables, and cured meats.

Add an extra punch of flavor to your favorite mac and cheese by grating in some Swiss cheese. You can even add it to breadcrumbs for an extra crunchy topping.

A Match Made In Heaven: When Bread Meets Cheese- Part One
Pao de Queijo- Brazil
Usually served at breakfast, this cheese-flavored roll is crispy on the outside and very chewy on the inside. Parmesan is often the cheese of choice in which this roll is made with for a delicious hit of cheese.

This famous cheese “Paneer” of India is used in this Indian delicacy which is paired with unleavened bread “Paratha”. These two pairs up and get filled with spiced and are fried and served at breakfast or on it’s on for a light meal.
Beer And Cheese Soda Bread- Ireland
Since the Irish love beer and sharp cheese, it is no surprise that their contribution to this list is beer and cheese soda bread. There is no yeast in the soda bread but there are beer and cheese, which is good enough for us. Some people even add bacon to the mix, what could be better?
Toastie- England
For toasties, cheddar cheese is the selected cheese for this English delicacy. It is pretty much England’s version of the grilled cheese from the U.S. However, the difference between toastie’s and grilled cheese is that the toastie is buttered on the inside and is toasted.

These little bread balls are sweet and spongy which are served throughout Indian subcultures in Southeast Asia, Bangladesh in particular. Rasgullas are usually made with an Indian cottage cheese known as ‘Chhena’. They are also made with semolina dough and light syrup. People often eat them as a dessert.

Very similar to a Colombian bagel, Pan de Bono is usually paired with a hot chocolate. It is made out of cornmeal, question, egg, starch and feta cheese.

Fried bread is one of the most popular street foods in Hungary. However, the sour cream and melted shredded cheese on top make it a lot more savory. A lot of the time, vendors will add other toppings to it or stuff them with requested ingredients.
Flammkuchen- Germany
Flammkuchen translates to flame cake and is quite similar to pizza. Its thin dough is topped with onions, pork, and soft cheese. It is then cooked in a wood-fired oven to create the perfect combination of gooey, crispy cheese bread.
Tiropsomo- Greece
This perfect combination created by Greeks is feta and bread which is best served warm. It is usually served with dinner, however, leftovers can be reheated to accompany breakfast.
Croque Monsieur- France
Despite this sandwich not being able to exist without the ham, it still is best known for its cheese as well. The French cheese is similar to Gruyere with its nutty flavor which is placed in between two slices of bread and topped with nutmeg. It is then baked, broiled and served.
Khachapuri- Georgia
This popular snack is eaten instead of pizza in Georgia. It is made with sugar, dry yeast, flour, salt, and olive oil. It is topped with lots of butter, eggs and feta cheese and a melty cheese. Yum!
A Taste Of Heaven: Sharp Cheddar Mac N’ Cheese with Bacon
Cooked bacon adds smoky flavor to the cheese and bread crumb topping in this flavorful and creamy macaroni and cheese casserole. Feel free to make it without the addition of green onions. I thought they went well with the bacon flavor, but if you’re not a fan of onions, you can leave them out. Serve this macaroni and cheese with sliced tomatoes or a tossed salad for a satisfying family meal.
INGREDIENTS
- 8 ounces elbow macaroni, about 2 cups dry
- 3 tablespoons butter
- 4 green onions, thinly sliced
- dash garlic powder
- 1/4 cup all-purpose flour
- 2 1/2 cups milk
- kosher salt and freshly ground black pepper, to taste
- 6 slices bacon, cooked, drained, crumbled
- 2 cups (8 ounces) sharp Cheddar cheese, divided
- Topping
- 1 cup soft bread crumbs
- 1 1/2 to 2 tablespoons butter, melted
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Yield: 4 to 6 Servings
PREPARATION
Cook macaroni in boiling salted water following package directions. Drain the macaroni in a colander, rinse with hot water, and set aside.
Heat oven to 350° F (180° C/Gas 4). Lightly grease a 2 1/2-quart baking dish.
In a medium saucepan over medium heat, melt the 3 tablespoons of butter. Add the green onions and garlic powder. Cook, stirring, for about 1 minute. Add the flour and stir until well blended and smooth.
Continue cooking, stirring, for 2 minutes. Gradually add the milk and cook, stirring, until thickened. Stir in salt and freshly ground black pepper, to taste.
Set 1/2 cup of the shredded cheese aside and stir the remaining 1 1/2 cups of cheese into the sauce. Continue cooking and stirring until the cheese has melted.
Combine the cheese sauce with the drained macaroni and then spoon the mixture into the prepared baking dish. Sprinkle bacon evenly over the casserole and then top with the reserved 1/2 cup of cheese.
Toss the bread crumbs with 1 1/2 to 2 tablespoons of melted butter and sprinkle over the casserole. Bake for 25 to 30 minutes, until lightly browned and bubbly.
