S’mores are an all-time American favorite, they take us back to times when life was much simpler, sitting by a campfire with our friends, singing campfire songs and burning the marshmallow to our s’more was our only worry. Let’s get back that delicious piece of childhood by taking it to the next level and making the best s’mores you’ll ever taste, using fine chocolate.
Recipe
Makes: Around 7 S’mores
What You Need:
1 chocolate bar of the finest dark chocolate of your choice.
Marshmallows
Graham crackers
What To Do:
From experience, we all know that how we roast the marshmallows is the most important part of the process. The best way to roast the marshmallow is to toast it without it catching fire but to let the fire mature into a glowing ember around the marshmallow. This allows the marshmallow to be roasted evenly so it is a perfect, gooey consistency on the inside and crispy on the outside. You should slowly rotate the marshmallow over hot coals until it is golden brown on all sides.
In the meantime, set a large piece of chocolate on a graham cracker by the fire so it can begin to warm.
Once your marshmallow is done, scoop it off the stick with the cracker and close together to make a s’more sandwich. Be sure to eat it straight away and don’t be afraid to let out your inner child and get messy with it.
You could also wrap the other s’mores in tin foil to keep them nice and warm and extra gooey.

Plum Liqueur Chocolate
These chocolates are from Japan but are also available in Korea, China, Thailand, and Taiwan. Sadly, they do not ship to the U.S. and the only way to purchase them is at the annual New York Chocolate Show. Each of these beautifully hand-decorated truffles is made with ganache which contains Japenese plum Liqueur (Umeshu). However, the liqueur is actually made from unripe apricots that are soaked in sugar and shochu, which is a semi-strong distilled Japenese spirit.

A chocolate shop in Portland, Oregon, took inspiration from blood sausage, which is popular in Western Europe and Asia. The owner, who is a former sous chef, only makes this ‘special’ chocolate for holidays such as Halloween and Valentine’s Day. This bizarre creation is made with cinnamon, smoked Spanish paprika, and blood. It is then enrobed in Felchlin 72 percent Ecuadoran chocolate and dusted with more paprika. It is no surprise that this chocolate is one of the least popular flavors available at the chocolate shop, but nonetheless, it still receives special orders.
Cucumber Vodka Chocolate
Well, this is one way to get in your ‘5-A-Day’. This exotic, handmade truffle is crafted with traditional French methods. How to Pair Cheese and… Chocolate?
Who doesn’t love cheese or chocolate? But together? Believe it or not, they’re actually the perfect combination for a tasting!

The Art of Tasting
Learning how to taste cheese and chocolate will deepen your appreciation for the foods and makers. Start with your basic senses and expand from there. Be sure both are room temperature before tasting. Remove the cheeses from refrigerator at least 20-35 minutes before the tasters arrive to maximize flavors and aromas. Cold cheese does not release flavors and aromas as quickly and alters the taste.
First, look…
Cheese: Some cheeses are intense in color while others are not. Look at the cheese rind. Is it uniform? Any cracks? Is the cheese dry like a walnut shell or moist like a sliced apple?
Chocolate: For chocolate, color depends on the origin of the beans. Quality chocolate will be shiny, glossy, and have clean edges. Look for bloom or grayish white steaks caused by poor temperature and improper storage.
Second, smell to appreciate…

A Personal Recommendation…
I had the chance to taste some of Heggy’s Chocolates and my personal choice would be White Chocolate Pretzel Delights. Just looking at one will make your mouth water, but opening the wrapper and tasting this delight just puts you on “Cloud 9” in chocolate heaven. If I had to compare to another chocolate, it would be Hershey’s Cookies N’ Creme, but ohhh, so much better!
